Peach Tortellini Salad with Basil Peach Vinaigrette


9 ounces cheese-filled tortellini
3 cups Jake & Amos Peach Halves, sliced
1 medium red bell pepper, sliced
¼ cup peach vinaigrette (see below)
4 cups mixed salad greens


4 Jake & Amos Peach Halves
2 tablespoons balsamic vinegar
3 tablespoons peach preserves
2 tablespoons olive oil
2 tablespoons corn syrup
1 tsp granulated garlic
1 tablespoon fresh lime juice
1 tsp salt
Pinch of red pepper


Cook tortellini according to packaging directions. Rinse and drain well. In a medium sized bowl, combine cooked tortellini, peaches and red pepper slices. To prepare vinaigrette, place the peaches in a blender or food processor and puree. Add remaining vinaigrette ingredients and blend until smooth. Pour vinaigrette over tortellini mixture and toss until well coated. Chill until ready to serve. When ready to serve, divide salad greens between four plates. Top with even amounts of peach tortellini mixture.?
