Easy Southwest Couscous Salad
1 cup uncooked whole wheat couscous
1 ¼ cups chicken broth
1 jar Jake & Amos Black Bean & Corn Salsa
salt and pepper to taste
In a large saucepan, bring chicken broth to a boil. Stir in the couscous. Cover the saucepan and remove from heat. Let stand for 5 minutes. Fluff the couscous. Pour the salsa into a separate serving dish. Add couscous and mix well. Season with salt and pepper and serve immediately, or refrigerate until ready to serve.?
