Peach Melba Muffins


1 cup diced Jake & Amos Peach Halves
½ cup chopped walnuts
½ tsp cinnamon
1 egg
2 cups all-purpose flour
1 cup milk
½ cup sugar
1/3 cup butter, melted
2 ½ tsp baking powder
2 tablespoons brandy extract
½ tsp salt
Raspberry jam


Preheat oven to 400 degrees F. Grease 12 muffin cups or line with paper liners. Place peaches in a bowl, sprinkle with cinnamon and set aside. In a separate bowl, sift together flour, sugar, baking powder and salt. Stir in walnuts. In a separate mixing bowl, whisk together egg, milk, melted butter and brandy. Stir the mixture into the peaches. Make a well in the center of the dry ingredients and fill with the peach mixture. Mix lightly, just until moistened. Fill muffin cups half full of batter. Place 1 teaspoon of raspberry jam in the center of each cup and then top with remaining batter. Bake for 20-25 minutes or until golden brown. Remove from oven and cool on wire racks.?
