Salsa Glazed Chicken

Description
The Salsa Glazed Chicken is sweet and spicy and super tender - sure to be a summer grilling favorite!
Ingredients:
2 pounds chicken thighs
For the marinade:
1/2 cup apple cider vinegar
1/2 cup vegetable oil
1/4 cup minced onion
2 tablespoons honey
1 tablespoon chopped cilantro
1 1/2 tablespoons chili lime seasoning
For the salsa glaze:
1 jar (16 oz.) J&A Pineapple Salsa
1/4 cup brown sugar
2 tablespoons apple cider vinegar
1 teaspoon chili lime seasoning
Juice from 1 lime
Directions:
- Place chicken thighs in a 9x13 casserole dish and set aside for later.
To make marinade:
- In a small mixing bowl, combine vinegar, oil, onion, honey, cilantro and chili lime seasoning.
- Whisk until smooth and well blended.
- Pour marinade over chicken to coat.
- Marinate, covered, for at least 2 hours or overnight in the refrigerator.
When you're ready to grill:
- In a small mixing bowl, make the salsa glaze by combining salsa, brown sugar, vinegar, chili lime seasoning and lime juice.
- Whisk until smooth and well blended.
- Set aside until chicken is cooked, as follows.
- Once grill is hot, add chicken and sear both sides, cooking until internal temperature is at least 165°F. When chicken is done, brush both sides with salsa glaze and cook an additional 5 minutes.
- Serving suggestion: serve with yellow rice and corn on the cob.
