Looking for a great spring recipe to spice up your weeknights? Try our Salsa Beef & Rice recipe, featuring our Jake & Amos Black Bean and Corn Salsa. This recipe is easy and doesn't take very long to put together.

Ingredients:

16 ounce jar of Jake & Amos Black Bean and Corn Salsa

1 pound ground beef

2 cups beef broth

15 ounce can of corn, drained

1 1/2 cups of instant rice

1 cup shredded cheddar cheese

1 ounce packet of taco seasoning

1 tablespoon minced garlic

1/2 onion, diced

14 ounce can of tomatoes, diced

1 avocado, cubed

Chopped green onion, optional

Chopped jalapenos, optional

Hot sauce of your choice

Directions:

1. In a large skillet over medium heat, cook the ground beef until browned and fully cooked, drain excess fat if necessary.

2. Saute the minced garlic and diced onion in the skillet with the beef for about 2 minutes. 

3. Stir in the taco seasoning, evenly coating the beef. 

4. Pour in the beef broth, diced tomatoes (with juice), Jake & Amos Black Bean and Corn Salsa, and the can of drained corn. Stir everything together.

5. Add the instant rice to the skillet. Bring mixture to a boil, then reduce heat to low. Cover the skillet and let it simmer for 5-7 minutes, until the rice has absorbed the liquid and is tender. Mix in hot sauce if adding any.

6. Sprinkle shredded cheese over the top of the skillet. Cover for 1-2 minutes to allow cheese to melt.

7. Top with the avocado and garnish chopped green onion and jalapenos, if desired. Serve and enjoy warm!
