Quick breads are one of my favorite sweets to make, especially when they include peaches! A perfect, refreshing seasonal recipe, serve this all summer long at family events, cookouts, and for the summer holidays. This Peaches and Cream Quick Bread is a great dish to bring to a picnic. This simple batter bakes to a super moist bread topped with a wonderful cream glaze.

Ingredients:

For the bread:

1 cup flour

1 jar (33 ounce)  Jake & Amos Peach Halves, drain well, save the juice, and cut into large chunks

2 cups sugar

1 teaspoon salt

1 teaspoon ground cinnamon

1 teaspoon baking soda

1 cup oil

4 eggs

1 1/2 teaspoon vanilla extract

2 tablespoons maple syrup

For the glaze:

1 cup powdered sugar

1/4 cup brown sugar

2 tablespoons milk

2 tablespoons peach juice

Directions:
  1. In a medium-sized bowl, combine flour, sugar, salt, cinnamon, and baking soda.

  2. Add in oil, eggs, maple syrup, and vanilla. On low speed, mix until it is just combined and smooth.

  3. Add Jake & Amos Peach Halves and gently stir in.

  4. Divide batter evenly between two well-greased 9-inch loaf pans.

  5. Bake at 350 degrees for 50-65 minutes or until your cake test comes out almost clean. Let cool completely on wire racks.

  6. Make the glaze by whisking together in a small bowl, powdered sugar, brown sugar, peach juice, and milk until smooth. Adjust thickness by adding in more milk to thin or more powdered sugar to thicken.

  7. Drizzle glaze evenly over both loaves and let it soak in and set before slicing the quick bread and serving.
