Peaches and Cream Quick Bread

Quick breads are one of my favorite sweets to make, especially when they include peaches! A perfect, refreshing seasonal recipe, serve this all summer long at family events, cookouts, and for the summer holidays. This Peaches and Cream Quick Bread is a great dish to bring to a picnic. This simple batter bakes to a super moist bread topped with a wonderful cream glaze.
Ingredients:
For the bread:
1 cup flour
1 jar (33 ounce) Jake & Amos Peach Halves, drain well, save the juice, and cut into large chunks
2 cups sugar
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 cup oil
4 eggs
1 1/2 teaspoon vanilla extract
2 tablespoons maple syrup
For the glaze:
1 cup powdered sugar
1/4 cup brown sugar
2 tablespoons milk
2 tablespoons peach juice
Directions:
- In a medium-sized bowl, combine flour, sugar, salt, cinnamon, and baking soda.
- Add in oil, eggs, maple syrup, and vanilla. On low speed, mix until it is just combined and smooth.
- Add Jake & Amos Peach Halves and gently stir in.
- Divide batter evenly between two well-greased 9-inch loaf pans.
- Bake at 350 degrees for 50-65 minutes or until your cake test comes out almost clean. Let cool completely on wire racks.
- Make the glaze by whisking together in a small bowl, powdered sugar, brown sugar, peach juice, and milk until smooth. Adjust thickness by adding in more milk to thin or more powdered sugar to thicken.
- Drizzle glaze evenly over both loaves and let it soak in and set before slicing the quick bread and serving.
