Peach Streusel Muffins

Summer wouldn’t be the same without celebrating one of its brightest stars. This muffin recipe is super moist and is perfect with your morning cup of coffee. It's also really good served warm with vanilla ice cream- just sayin! It's peach season and a wonderful time to make these.
Muffin Ingredients:
2 cups Jake & Amos Peach Halves, drained and diced
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 egg, room temperature
1/4 cup milk, room temperature
1/2 cup butter, melted and cooled to room temperature
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
Topping Ingredients:
1/4 cup all-purpose flour
1/3 cup light brown sugar, packed
1/3 cup pecans, chopped
1 teaspoon cinnamon
2 tablespoons butter, melted
Directions:
- Preheat oven to 400 degrees.
- Grease paper cup lines of a 12-cup muffin tin.
- Make the topping by combining all topping ingredients in a bowl until the mixture is crumbly, then set aside.
- Make the batter by adding the melted butter, milk, and egg into a medium bowl. Whisk to thoroughly combine.
- In a large bowl, combine the flour, granulated sugar, baking powder, cinnamon, and salt, then stir with a fork to combine. Add the milk and egg mixture to the flour mixture and fold together until it is moist. Fold in the peaches to the batter.
- Fill your muffin tins 3/4 full and sprinkle in the batter and topping. Bake at 400 degrees for 20-25 minutes.
