This slow cooker recipe is a delicious and easy way to eat your pork and sauerkraut for good luck this New Year's! Or, make it for a New Year's Eve party - it's sure to be a crowd-pleaser. If you're hosting, you can put it together a couple of hours before people arrive and have one less item on your to-do list to worry about while prepping!

Ingredients:

1/2 pound corned beef, chopped (will yield about 1 1/4 cups)

1 cup Jake & Amos Sauerkraut (16oz), drained

1 package cream cheese (8oz), softened

1 1/4 cups swiss cheese, freshly grated

3/4 cup thousand island dressing

1/2 cup sour cream

Parsley & bacon to garnish

Directions:
  1. Add all ingredients to a crock, minus the parsley, and stir. Cover and cook on high for 1.5 to 2 hours. Stir the mixture every half hour or so to ensure all the cheese has melted.

  2. Once it is all melted together, garnish with parsley & bacon

  3. You can remove and serve hot with crackers or toasted bread or keep it in the crockpot on low heat! This dip is also great with freshly-cut veggies if you're looking for a lighter dipping option.
